Of recent, I have had an overwhelming desire to eat fish. All the time. For every meal. As much as possible! Or at least once a week. (And no, for those of you who I'm sure are wondering, I am definitely not pregnant). Luckily, T-rav is ok with this, so I've been able to freely experiment with different types of fish. I've been cooking all the types of fish in all fairly similar way (not too many spices, sauces, etc) so that we can taste the flavor of the fish, my purpose being to discover what kinds of fish I love, hate, or am indifferent towards. Bear in mind that my fish experience is based on what our local Smiths ships in each day, and therefore some of it may not be the most fresh. So just think how delicious these fishes would be if they were fresh! Those of you who live near a coast- I'm jealous! Anyway. Here is my list thus far:- Tilapia- very tasty, light, flaky, and one of my favorites
- Flounder- surprisingly good. I was a bit wary at first (something about the Little Mermaid comes to mind...), but it had a very mild fish taste, wasn't as flaky as the tilapia and is one of T-rav's favorites
- Sockeye Salmon- salmon in any form is always good
- Cod- I can't remember this one well enough to describe it, but I liked it, T-rav didn't
- Red Snapper- just a fish, nothing spectacular or terrible about it
- Catfish- not our favorite. It tasted very...fishy, was thick and almost rubbery in texture
- Halibut
- Sole
- Mahi Mahi
- Tuna (not from a can- a nice fat fillet)
On another note, you should all go check out this website, which is a simulation of what it's like to be a refugee. It's very enlightening, especially if you're unfamiliar with the whole refugee thing.

I hope you're not forming any *permanent* opinions....
Maybe ITALY is a better place to test your palate?

My poor husbund LOVES fish and i never make it for him. poor baby. cod is big here in brasil- dried cod and then they cook it in a bunch of olive oil and peppers and onions and all sorts of stuff i cant remember bc i have never eaten it. i think you would like it though. rapha sure does. its called bacalhau. anyway i hate it. i hate the smell of fish, the LOOK of fish especially when their eyes are still on it when you buy it, the texture of fish its al just so....fishy grosss
Looks like you have the different fishes pretty well covered. I am obsessed with salmon, I just love it, i would venture to say it is one of my favorite foods, with just a little lemon pepper and dill. As big as a fish lover as I am, I am still weary about raw fish, I really want to try it and like it but it is the idea of it that I can't handle, do you have any suggestions? I really want to make a big tuna steak too but I would cook it all the way through and I am afraid it would be dry...uhhh...I should just do it (eat it raw). Good luck with your experiment, keep us posted.
Ginny- I haven't had it yet, but according to Josh Rich, the best tuna ever is just slightly seared (like a good steak). You should definitely try it raw because you might love it!
Salmon and Mahi Mahi are my favorites! I particularly like grilled Salmon with a very light sesame ginger glaze. And Mahi Mahi is probably the least "fishy" tasting fish that exists. Which is why I love it-- grilled, blackened, whatever, it's good!

Have you tried Swordfish? It is amazing...or at least the one we had in Hawaii was. Unfortunately, I think it's a bit expensive, but still very tasty.
I love fish! I really didn't like it much until I moved to Seattle. Mahi Mahi is probably my favorite. I also really hated Salmon until I had it in Seattle. Seriously it was caught that day! Then our neighbors went to Alaska and brought some salmon back. It literally melted in my mouth! AHHH how I love fish. If you ever are in Seattle you should have Salmon at Elliott's and swordfish at the Flying Fish. Visit Seattle and you will never want to go back to Provo and eat fish from Smith's =)

Tilapia is my favorite. Come down to SLC and lets go to market street. It is my favorite seafood place. Or lets cook some tequila lime shrimp.
