delicious simplicity

This is Trav's dinner of choice when it's his turn to cook (adapted from bettycrocker.com)

Fettuccine with Ricotta, Tomatoes and Basil

1/2 pound fettuccine pasta
2 tbsp melted butter
3/4 c ricotta cheese
1/2 c parmesan cheese
1 tomato, chopped
2 tbsp coarsely chopped fresh basil (or about 1 tsp dried)

optional additions:
4-5 slices of bacon, cooked and broken into pieces
1/2 bell pepper and 1/2 onion, sauteed in olive oil
1/2 c cooked chicken
  1. Cook and drain pasta as directed.
  2. Stir together butter, ricotta cheese and 1/3 c. parmesan cheese. Toss with hot fettuccine.
  3. Top fettuccine with tomato, basil and remaining cheese (and everything else)
*You may need to adjust the ricotta cheese, depending on how much extra pasta or parmesan cheese you toss in.

Total time: 12 minutes.

rapha doesnt cook that much. Last week he did cook some delicious meat and rice that wasnt half bad...it actually turned into more of a risotto.

I never know what to cook. You should send me some good easy cheap recipes that i can make. rapha never gives me ideas bc he says he eats anything and I am the picky one. AS IF! ;)
